3. Place the frying pan on the stove, pour in oil and heat to frying temperature. After heating, reduce the heat. Dredge each fish in flour on each side.
4. Shake off excess flour and place in a frying pan with hot oil.
5. After 5-6 minutes, turn the smelt over to the other side and fry for about another 5-6 minutes.
Serve the finished fried smelt on the table immediately after cooking.
