Delicious trout soup on the fire
Almost everyone likes to have picnics in nature, no matter whether they live in a metropolis or a small village. Gatherings around the fire can be arranged all year round, but most often this happens in the warm season. The last sunny days of autumn are a great time to gather outdoors or at a country house for a picnic with friends and family. Not a single such event is complete without cooking, and most likely this is the main activity.
But the boring grilled sausages or kebabs are already quite boring. I want to try something new, but no less tasty and simple. One of the dishes that is ideally prepared over an open fire is fish soup. This campfire soup turns out rich, satisfying and with spicy notes of smoke. For fish soup over a fire, it is best to take non-lean fish, and vegetables that are strong and without damage. The following recipe is based on trout fish.
First you need to prepare all the components, that is, wash and clean them. Pour water into a 5-liter pot and boil over a fire. Then, all the fish is placed in boiling water and cooked for about 20-25 minutes.
After the trout has reached a semi-cooked state, it must be placed on a separate plate so that only fish broth remains in the pan.
Chop the vegetables coarsely so that during a sufficiently long cooking time they do not lose their shape or become overcooked. Also, large cuts will be much more saturated with broth. If you use fresh vegetables in your soup, they will be tender and have a richer flavor.
Next, the potatoes and carrots are sent to the fish broth and cooked over moderate heat until tender, about 30 minutes. If the heat is high, the cooking time for vegetables will be reduced.
Then coarsely chopped onions are added. Cook for another 10 minutes. It is important that the onions do not overcook and become tasteless.
The final step in preparing this dish is to return the trout to the soup. Be sure to add bay leaf, pepper, salt to taste and bring to a boil.
