Quick soup with sausages
To whom should we give the palm for the appearance of such a first course? Germans and Austrians have been using smoked meats for a long time, cooking them on the grill or frying them in a frying pan. Liquid dishes with smoked sausages are not uncommon in various restaurants around the world. This recipe also assumes that you will want to add something of your own. Please, in any kitchen - at home or in the most famous restaurant - you can and should experiment. Here's a hint: add turnips. And the taste of the soup will change dramatically!
Ingredients for a liter saucepan:
potatoes - two to three pcs.; smoked sausages - three (regular size) or six pieces if small; onions and carrots - one piece each, celery - one or two sprigs; water, vegetable oil, spices as needed.
How to cook:
start with vegetables. Remove the skins from onions and peels from carrots and potatoes before rinsing these products and celery under running cold water. After
•finely chop the onion, celery and, as you wish, sausages, carrots and potatoes;
• let the potatoes and carrots boil in lightly salted water;
• fry the onion and celery, naturally, in oil;
•as soon as they begin to brown, add smoked meats to them.
Wait until the vegetables are cooked, then add the fried foods to them. Stir the soup and season it with spices. Carefully remove scale from the walls of the dishes (you can use a small piece of gauze).
How to decorate this first dish? The best way to do this is with greenery. Parsley and dill, cilantro can give soup with smoked sausages a touch of freshness and lightness.
