Cherry and blackcurrant liqueur
The complex taste of the liqueur is its undoubted advantage. Cherry and currant leaves give it a mysterious spicy flavor. Cherry branches are also added to the liqueur, which creates that special shade that is characteristic of drinks stored in wooden barrels. Cherries and currants get along well, the berries create a delicious new mix. You will only have to wait three to four days for the liqueur to be ready. During this time, the taste acquires stable stability, and in the future it remains almost unchanged. The strength of the liqueur will not be prohibitive; it fully corresponds to the class of light berry drinks based on alcohol.
Ingredients
- Cherry - 250 g.,
- black currant - 350 g.,
- alcohol 95% - 350 ml.,
- water - 800 ml.,
- sugar - 350 g.,
- citric acid - 1 tsp,
- black currant leaves,
- cherry leaves with twigs.
Liquor preparation sequence
1. To prevent the liqueur from looking like fermented liqueur, take high-quality ripe cherries and currants. Pluck 3 thin cherry branches with clean young leaves. Cut 6-8 currant leaves.
2. Berries and leaves are washed; no dust should remain.
3. Place cherries and currants in a saucepan.
4. Add granulated sugar.
5.Add citric acid. The liqueur will not be sour, but citric acid will serve as a unifying principle for cherry and currant berries.
6. Place the collected leaves into the pan.
7. Accurately measure the required amount of water. Pour water into the pan.
8. Boil cherries and currants for 5 minutes, the heat can be medium.
9. When the broth has cooled to room temperature, filter it. They throw away berries, twigs, leaves. The strained broth is boiled for another minute over high heat. Wait again for the liquid to cool completely.
10. Pour the liquid into a glass container. You can take a can or a large bottle.
11. Combine cold sweet berry decoction with ethyl alcohol and stir.
12. Cover the dish with a lid and leave for 3-4 days. There is no need to shake or stir the liqueur; the drink will survive all its transformations in silence and in the dark.
13. Pour the finished liqueur into beautiful bottles and place it in the refrigerator. The chilled drink can be served immediately. Cherry and blackcurrant liqueur will look great next to a delicate sponge cake.
