How to cook ham from a whole piece of meat. 1 trick of great juiciness
Ham is used for cold appetizers, toasts and canapés. Sometimes you want to cut it, put it on a piece of bread and make a sandwich for tea. But you can’t always rely on the quality of store-bought products.
But making ham at home from the most common ingredients is very easy. You don’t need any chef knowledge to do this, you just need desire. And one trick will make it uniquely tender and mega juicy.
Required:
- 1 kg. pork shoulder;
- 15 gr. extra salts;
- 10 gr. nitrite salt;
- glass of water;
- medical syringe 20 ml;
- 2 tsp ground smoked pepper;
- 1 tsp Provençal herbs;
- tsp chili pepper.
Cooking juicy ham from meat
Place two types of salt in a glass of water and stir until completely dissolved.
Fill the syringe full of saline solution and insert the needle.
Rinse the pork, place it on a plate and add brine over its entire surface, from different sides. This way, the pulp will be juicier and evenly salted. This is the main trick.
Place the piece of pork in a baking dish, cover with cling film and refrigerate for 3-5 days.
After this time, rinse the meat and remove excess mucus.
In a bowl, combine chili, herbes de Provence and smoked paprika.
Generously rub a spatula with spices on all sides and insert a thermometer into the middle.
Turn on the fan in the oven and set the temperature to 80 degrees. Bake the pork for about 3 hours until it reaches 70-71 degrees.
Homemade ham made from natural ingredients is ready. Cut it into slices and serve.
