New Year's colorful meringues on skewers
Meringues on skewers are light, airy sweets consisting of egg whites, citric acid and sugar. Multi-colored sweets will make an elegant composition that can be placed on the festive table. Not only children will appreciate such a sweet surprise, adults will also enjoy taking apart the pyramid with goodies. After dancing, it’s so nice to sit in a chair, take a meringue on a skewer in one hand, and a glass of cool champagne in the other.
1. Meringues are tinted with gel food coloring. If you don’t stock up on such paints, you can bake single-color meringues. After being in the oven, the white meringues become creamy and look nice against the backdrop of colorful Christmas balls.
2. It’s convenient to beat chilled whites, so keep the eggs in the refrigerator until you start working on the dessert. The whites are separated from the yolks in any convenient way; this can be done at the time of breaking the eggs. Second option: carefully break the eggs and lower them into a bowl, and then use a tablespoon to lift and pick up all the yolks one by one.
3. There should not be a single drop of yolk in the prepared whites.

You can form the meringues on a baking board lined with paper, and then carefully transfer the paper sheet to a baking sheet. A skewer is inserted into each meringue, moving the stick to the very top, the sharp tip should remain at the bottom.
9. Take a new bag and draw 3 stripes of yellow gel dye inside. Fill the bag with proteins and squeeze out the mass. When all the whites are on the baking sheet, turn on the oven at 130 degrees. Meringues on skewers are baked for 2-3 hours. The meringues can be taken out when they completely lose their stickiness: they become dry and light.

11. Thread small plastic balls onto skewers. The foam base is masked with fluffy “rain.”
