This is how cucumbers will be eaten in the future. Homemade cucumber noodles - a dish that everyone will remember
It would seem that homemade noodles can surprise you, but they can also be prepared in a very unusual way. In Taiwan, for example, cucumber peel may be added to it. Try making these noodles with spicy sauce and cracklings.
Ingredients:
- large cucumbers 5-6 pcs.;
- water – 1 l;
- flour – 400 gr.;
- salt – 2 tsp;
- green onions – 3 stalks;
- garlic – 2-3 cloves;
- chili pepper – 2 pcs.;
- ginger;
- pork belly or lard with a slot - 300-500 gr.;
- soy sauce – 1 tbsp;
- oyster sauce – 1 tbsp;
- starch - 1 tbsp.
Cooking process
Washed cucumbers are peeled and chopped.
The peel is thrown into a blender, filled with a glass of water and crushed.
Add 1 tsp to flour. salt, add 200 ml of filtered cucumber juice and knead the noodle dough. In the original recipe, 1 tsp is also added to the flour. soda ash to preserve the green color of cucumbers. Without it, the noodles will lighten in color after cooking.
The dough is kneaded and left for 10 minutes for the gluten to swell.Next, it is rolled out with a rolling pin into a pancake 1 cm thick, cut into strips 3 cm wide. Then the strips are cut in half. Pieces of dough are greased with oil on all sides, covered with film and sent to the refrigerator.
After 3 hours, chop the onion, garlic, chili pepper and a piece of ginger.
The brisket or lard is cut separately.
It is fried with a little oil over low heat.
Once the characteristic golden color appears and there is enough rendered fat, the previously chopped ingredients are added. They are also fried until almost done. At the end, add a spoonful of soy and oyster sauce.
0.8 liters of water is poured into the frying pan from above. Extinguishing continues for another 10 minutes. Then add 1 tsp. salt and chopped cucumbers. They need to be simmered until cooked. To increase the thickness of the sauce, starch diluted in cold water is added.
The dough is taken out of the refrigerator and the noodles are stretched from it.
It is cooked in a separate pan.
As soon as the noodles float to the surface, they can be removed. It is washed in cold water and placed on a plate. The sauce is poured on top. All cucumber noodles are ready.
