Cupcake with raisins on kefir
My eldest son, like me, loves baking with raisins and therefore quite often asks me to make a cupcake. In general, muffins are a favorite pastry for many children, especially those made with raisins, nuts or other goodies. And they are prepared quite simply and quickly.
Here is the recipe for my kefir raisin cake, which turns out very tasty.
Required ingredients:

First you need to beat the eggs with sugar.

Then add 1 glass of kefir and mix well.

Next, gradually add flour to the egg-kefir mixture, stirring continuously so that no lumps form in the dough. Add baking powder and vegetable oil. Mix everything well.

Now add well-washed raisins to the dough. Instead of raisins, you can use nuts or candied fruits.

It is necessary to mix everything thoroughly.

I have a special mold for making cakes, namely a metal one with wavy sides. But you can use any other baking dish in the oven.
Tip: To prevent the cake from sticking to the pan, you can sprinkle it with semolina or breadcrumbs.

Pour the resulting dough into a baking dish and place in the oven.

It is advisable to bake this raisin cake at a temperature of 180 degrees for 50 minutes.
But you can tell when the cake is ready by its golden brown appearance and appetizing aroma.

It is better to cut the cake into portions when it has cooled down a little.
