Homemade fruit ice is much healthier than an industrially produced product. You control the process from start to finish and can be sure that there are no harmful additives or chemical dyes. To thicken, you can use starch or gelatin, or you can do without them.
For your convenience, we offer a step-by-step recipe with photos and a detailed description of all steps.
Ingredients:
  • 250 g berries;
  • 1 tbsp. water;
  • 1 tbsp. Sahara.

I will use jambolan berries. Jambolan is a fragrant and juicy berry native to India. It is also grown in Australia, East Africa and the Philippines. Local residents know its diuretic, astringent, carminative and antiscorbutic properties. These fruits are rich in tannins and pectin, and are also saturated with large amounts of organic acids and beneficial microelements: magnesium, potassium, calcium, iron, sodium, phosphorus. Jambolan berries are edible fresh or dried. They are also used to make jellies, syrups, juices, jams and vinegar. The taste of the fruit is reminiscent of a mixture of lemon and grapefruit and is often used as a substitute.
Few people know about these fruits, so if you want to surprise your guests with an unusual delicacy, we recommend making fruit popsicle from jambolan.
You can use almost any berries: cherries, strawberries, victoria, raspberries, etc. And even watermelon!
To make ice cream, you will also need a deep bowl, cheesecloth, a blender, popsicle molds and some free space in the freezer.
If you don't have a special ice cream mold at home, use regular plastic cups. Cover them with foil plates - and the wooden sticks will be securely fixed.

Preparing fruit ice:


1. Remove the seeds from the berries.

  • Place the berries in a wide, deep bowl.
  • Use your fingers to squeeze out the seeds.
  • Pour in a little water to easily separate the seeds from the pulp.

2. Squeeze out the juice.

  • Place the jambolan pulp in a blender and grind until you obtain a thick puree.
  • Add a glass of water and squeeze the juice through cheesecloth. This amount should be enough for 6 popsicle molds.

3. Add sugar.

  • Add a glass of sugar and stir thoroughly. Taste and add a little sugar if necessary.

4. Fill popsicle molds.

  • Wash and dry the popsicle molds and sticks.
  • Pour the juice into the molds.
  • Insert chopsticks.

5. Freeze the juice in the refrigerator.

  • Place the molds with the juice in the freezer and leave them there overnight.

6. Enjoy the unusual taste of ice cream.

  • The liquid freezes overnight, so you can taste the delicacy the next day.
  • Remove the popsicle from the freezer. Run the molds under cold running water for a minute.
  • Turn the ramekins upside down over a large plate.
  • After a minute, the ice cream will slide out onto the plate on its own.
  • Arrange beautifully and serve to guests.

Such a treat will not only delight your loved ones with an unusual taste, but will also help them cool down on a hot summer day. The youngest guests will undoubtedly love the way this ice cream turns their tongues purple.
If there is nowhere in your freezer to put the molds, add swollen food gelatin to the sugared juice and pour the resulting puree into a small bowl. Place it in the refrigerator for 6-8 hours and enjoy the original tropical jelly.
