Adjika homemade
Compound:
tomatoes – 5 kg,
sweet bell pepper – 0.5 kg,
carrots – 0.5 kg,
onion – 0.5 kg,
sour apples – 0.5 kg,
hot pepper – 2 pcs.,
garlic – 200 gr.,
salt - 1 glass without top,
vegetable oil – 0.5 cups,
sugar – 1 glass.
Cooking method:
Wash the tomatoes and place in a colander. Then cut them into 4 or 6 pieces.
Wash the pepper and remove seeds. Cut the pepper into small strips.
Peel the carrots and cut into half rings.
Peel the onion. Then cut it into 4 parts.
Wash the apples and drain excess water into a colander. Then peel and core them.
Beat everything together in a blender or pass through a meat grinder.
Add salt and vegetable oil to the prepared mass. Cook everything together for 2.5 hours over low heat.
Cut the red hot pepper into small pieces and remove all the seeds. Add it to the boiling adjika and cook together for another 25 minutes.
Add sugar to adjika and cook everything together for 15 minutes.
Peel the garlic and pass through a press. Add garlic to adjika. Let everything boil for another 10 minutes.
Pour adjika into sterilized jars. Leave some space empty. Close it with lids.Turn upside down until completely cooled.
