When removing the spine of the herring along the back, as many cooks do, small bones may remain inside the fillet. To avoid them, you need practice, which an ordinary person does not have. The process of cutting herring into pitted fillets
The cutting board is placed in a plastic bag and the herring is placed on top of it. The head of the fish is cut off, the belly is cut open and the giblets are removed. Then the bag is pulled together with the insides, and the board remains clean.
The herring is washed in cold water. Next, with your index finger on the right side of the cut head, you need to pry a couple of ribs and tear them out of the fillet. Then it is also done with the thumb on the left. After this, you need to move towards the tail and remove the ribs along with the ridge.
Almost all the small bones will come out with the ridge. All that remains is to simply cut it off along with the tail fin.Next, you need to run your finger along the ridge line to push the fillet down to the skin.
