How to cook pig ears
Few housewives know how to cook pig ears so that they turn out to be a very tender and tasty dish. And some people ignore this by-product altogether. That's in vain. With the right approach, pig ears can make interesting dishes. They can be used in preparing salads or main courses (goulash, for example). Pig ears can make an excellent aromatic straw for beer. But first, this product should be boiled for one to two hours (depending on what you plan to do with it next). In this case, it is advisable to add ingredients to the broth that are usually used when cooking jellied meat. And then you can do whatever you want with them.
Today, for example, we will cook pig ears in the oven, which can be used as an addition to a side dish of vegetables or cereals.
Ingredients:
- pig ears – 3 pcs.;
- large onion;
- half a small carrot;
- 2 bay leaves;
- 4 allspice peas;
- a little garlic, salt and ground pepper (to taste);
- 2 tablespoons soy sauce;
- a teaspoon of all-purpose seasoning;
- about a quarter cup of vegetable oil.
For the sauce:
- a small piece of butter (about 20 g);
- dessert spoon of white flour of any kind;
- half a glass of broth in which the ears were boiled;
- a tablespoon of mayonnaise;
- a little spice.
It doesn’t hurt to additionally add clove buds, celery or parsley root to the broth when cooking the ears. Instead of mayonnaise, you can use sour cream, mustard, tomato paste or adjika at the last stage of cooking.
- Yield: 2 servings.
- Cooking time is about 2 hours.
How to cook pig ears in the oven:
Place well-washed pig ears in a saucepan with a small amount of cold water and place on high heat. After boiling, cook the offal for literally 5 minutes. Pour the broth into the sink and fill it again with fresh cold water. As soon as it boils, throw half a peeled onion, bay leaves, peppercorns and carrots into the pan. After forty minutes of cooking, add salt and continue cooking the ears for another half hour.
Remove them from the broth and cut them into strips of the desired length and width. Chop the other half of the onion and garlic as desired.
Using vegetable oil, first fry the chopped spicy vegetables over high heat. Then add the pork ears cut into strips. Again, fry everything together for three minutes over high heat, not forgetting to stir.
Pour soy sauce into the pan, then add universal seasoning and ground pepper. Fry for a couple more minutes (it is advisable for all the liquid to evaporate) and remove from heat.
Prepare the sauce. Add flour to melted butter and stir until smooth. Then pour a mixture of broth, mayonnaise and spices into this mass (first mix all these ingredients in a separate container), bring to a boil.
Pour the resulting sauce into a frying pan with fried pork ear strips, stir, then transfer to a baking dish (be sure to grease it with any oil).
Bake the pig ears in the oven for a third of an hour at t = 180 °C. Of course, preheat the oven. Serve baked pig ears in the form of aromatic and very tender straws warm or hot.
