How to Make the Crispiest French Fries with Thick Cheese Sauce
French fries are one of the easiest fast food dishes to prepare. However, to make it really crispy, you need to not just fry it, but prepare it properly. Potatoes cooked this way will taste better than those at McDonald's or anywhere else.
Ingredients:
- large potatoes;
- starch;
- butter – 20 gr.;
- flour – 0.5 tbsp;
- sriracha sauce – 1 tsp;
- milk – 120 ml;
- Cheddar cheese – 100 gr.
Process of making French fries and sauce
This is a relatively labor-intensive cooking method, so it is better to make extra potatoes. Some of it can then be frozen. Large potatoes are peeled. The rounded part is cut off so that the cut sticks are straight.
Potatoes are cut as usual, or into larger pieces. In the latter case, it will be crispy on top and soft inside. Be sure to try this particular cut, it’s also quicker to make.
Sliced potatoes are poured with cold water for half an hour so that the starch comes out of them.
Then it is washed with cold water and boiled in boiling water for 5 minutes.
Undercooked potatoes are rinsed in cold water to stop cooking. Then it is dried with a napkin.
The dried pieces are placed in a plastic bag, and a couple of tablespoons of starch are added to them. The bag is closed and gently shaken. Every piece needs to be breaded. They are then pulled out and shaken to remove excess starch. You can fry some of the potatoes, freeze the excess and then cook as needed.
Before frying the prepared potatoes, you need to cook the sauce. To do this, melt butter in a frying pan and fry half a tablespoon of flour in it. Then add 1 tsp. sriracha sauce and stir everything together.
You need to fry the flour a little in butter and sauce, then pour in 120 ml of milk. Once boiling resumes, add cheese little by little. The melted mass should bubble until it becomes thick, then the sauce is removed from the heat.
Next, the potatoes are fried in sunflower oil previously brought to a boil. Before this, all the pieces are shaken again to remove excess starch. The potatoes are cooked for 3 minutes over low heat, then removed half-raw to the grill.
When the potatoes have cooled, they are fried again until cooked, which will take 3-4 minutes.
After this, you need to let it drain from the oil, and you can serve it on the table along with the cheese sauce, which has already been cooled at that time. The latter is decorated with finely chopped parsley and a pinch of red pepper.
