A universal beet preparation for the winter that is never enough
If there is no space to store fresh beets, they can be boiled and rolled into jars. This universal preparation is useful in winter when preparing herring under a fur coat, various salads, borscht, and it can also be served as a side dish for meat.
The beets are washed and cooked in the usual way.
As soon as it is ready, you need to fill it with cold water. A sudden change in temperature will make cleaning easier.
Then it is grated on a coarse grater.
Oil, salt, sugar and citric acid are added to the grated beets.
It is mixed and put on fire. From the moment the oil boils, it must be simmered for 15 minutes with the lid closed. To prevent the dish from burning, it must be stirred periodically.
Boiling beets are placed in sterilized jars.
For this amount of ingredients, their total volume should be 2 liters. The pan is not removed from the heat at this moment. The jars are rolled up with lids and turned over until they cool. They must be wrapped in a blanket on top.Such a preparation, subject to sterility and proper cooking, can be stored at room temperature, but it is optimal to move the jars to the cellar, basement or refrigerator.

- beets – 2.5 kg;
- vegetable oil – 150 ml;
- salt – 2 tsp;
- sugar – 6 tbsp;
- citric acid – 2 tsp.
