Delicious salted brisket made from inexpensive meat
Delicious dishes are not always obtained from expensive meat. You can also prepare a more economical option - from cheap brisket or lard. And it is not necessary to boil, stew or fry the meat - it can be salted, preparing an amazing appetizer for any table.
The following ingredients will be required:
- pork belly – 1,200 gr.;
- water – 3 liters;
- coarse salt – 300 gr.;
- fresh dill;
- garlic;
- black pepper, ground red pepper.
Brining brisket at home
Cut the brisket into large pieces. Place tightly in glass or ceramic dishes.
Boil 1.5 liters of water, add 150 g. coarse salt, mix well. Bring to a boil again and pour in the brisket. The liquid should completely cover the food.
Cover with plates or other utensils, creating heaviness or “oppression”. We pack the container with meat in cling film and leave it at room temperature for 2 days in a place that does not allow open sunlight.
We take out the brisket, wash the dishes, and leave the meat as is.
We repeat again - boil water with salt (1.5 liters and 150 g), change the liquid, pouring the brisket again.Place under pressure, cover with film and marinate in the refrigerator for 7 days.
We rinse the brisket and leave it in a colander or sieve to drain off excess water. You can also pat the brisket pieces dry with a cotton cloth or paper towels. We pack the meat in plastic bags and put it in the freezer for 1-1.5 hours.
Finely chop dill or other favorite greens.
Grate the garlic on a fine grater or squeeze it through a press.
Rub the brisket with garlic and dip in herbs.
If you like a spicier dish, sprinkle it with ground black pepper or paprika, press down a little so that the seasonings coat the meat well.
You can serve the brisket immediately, or you can wrap it in cling film and store it in the freezer, removing it as needed. Cut into small pieces when serving. The appetizer is suitable for both everyday and holiday table.
