Eggplant recipe for those who don't like them
Purple eggplants can be prepared in an unusual way and even those who don’t like them will like them. The finished version of the snack looks very unusual and tastes like crispy vegetable sticks. They are served as a separate dish or as an addition to the main dish.
Required:
- 4 eggplants;
- 3 liters of water;
- 2 tbsp. salt;
- 3 chicken eggs;
- 2 tsp starch (corn);
- breadcrumbs;
- for frying: vegetable oil.
Prepare an original eggplant appetizer
Peel the eggplants using a vegetable peeler. There is no need to cut off the stalk. Using a sharp knife, make thin slices, then strips.
Dissolve the salt in cold water, add the vegetables and leave for 15 minutes. Blot with paper napkins and dry.
Combine starch and eggs in a bowl, stir with a whisk until smooth.
Dip the cut vegetables in the egg mixture, then in breadcrumbs and fry in well-heated oil. Turn the appetizer periodically to ensure it cooks evenly.
Pat the dish with a towel or paper to remove excess fat. Transfer to a serving plate and serve.
Nightshades prepared this way are soft on the inside and crispy on the outside.
