Delicious zucchini pizza
Zucchini pizza is fantastic! You will get it right the first time and everyone will like it.
To prepare such a pizza you will spend a maximum of an hour of time, including baking time.

Ingredients
Needed on a standard baking sheet:
- 1 medium or 2 small zucchini,
- 1 large carrot
- 1 bell pepper,
- 2 onions,
- 100 ml milk,
- 3 eggs,
- 6 tbsp. l. flour,
- salt, olive oil,
- a piece of cheese,
- 2 tsp. baking powder,
- 2 tomatoes
- olives.
Depending on the size of your baking sheet, you can increase or decrease the amount of ingredients. You can also use salami or shrimp as a filling. I made do with just vegetables.
Making zucchini pizza
Grate the zucchini together with the peel (only young zucchini has the peel) onto a coarse grater. Salt and leave for 15 minutes to release the juice.
Fry the chopped onion for 3 minutes in olive oil (replace with any vegetable oil if desired).
Then add coarsely grated carrots and bell pepper to the onion. It’s better to take bright red pepper: it will make the pizza look more beautiful. I only had 2 green peppers.
Peppers can be cut into squares, strips, circles - whatever you want! Fry everything together for another 5 minutes.
Beat 3 eggs with a whisk, add sifted flour, baking powder and milk in portions.
We achieve a smooth, lump-free dough consistency, similar to thick sour cream.
Squeeze the zucchini thoroughly, mix the zucchini and other vegetables with the dough. You can add spices.
Cover the baking sheet with paper, grease the paper with oil and pour the dough onto the paper. Level the dough all over the baking sheet.
Place olive halves and tomato slices on top.
Bake at 180° for 25 minutes. Then take out the baking sheet, sprinkle the pizza with grated cheese and return to the oven for another 5 minutes.
I didn’t even have time to take a photo of the finished pizza with black olives. I had to immediately bake another one, this time with green olives, it was so delicious!
